Shall I tempt you?

Strawberries, not just for shortcake anymore!

I love strawberry season. I am NOT a home-canning person but I love strawberry season. I love the smells, the tastes, the colors and the recipes, even though I can't make jam.

Did you know strawberries are full of all sorts of health benefits?
* One serving of strawberries (about 8) has a ton of Vitamin C, even more than an orange
* Fiber, Potassium, Antioxidants and Folate are all present in large quantities.
* Strawberries can reduce some age-related cognitive function, encourage prevention of cancers and support heart health!

The California Strawberry Commission is encouraging all of us to take another look at this little red, nutritional powerhouse.

Ok, here's the most important part of this post: A RECIPE
This dessert is known around here as "Rich's Favorite Dessert"

In a medium saucepan, mix together:
1 package strawberry Jello
1 package cook-type vanilla pudding
1 package cook-type tapioca pudding
3 cups of water

Bring to a gentle boil.
Once bubbly, pour into a 9x13 pan (a pretty one, if you have one)

Allow to rest on the counter for about 30 minutes.

After 30 minutes, stir in one package of frozen strawberries and one container of whipped topping (avoid the nonfat stuff... will make your dessert watery). Stir together gently till the dessert is uniformly pink.

Place in the refrigerator for at least an hour to set completely.

Before serving, frost the dessert with another container of whipped topping.

Serves: 10-12 people or one hungry husband!
